Third course: scallops and various fish on top of seaweed (famous from the cold waters of Hokkaido, the northern island of Japan), on top of a big sea shell on top of a gas burner. The fish is delivered raw to the table and then cooks for 5-10 minutes. The guy with the camera is my boss Gary.
