The Gemini KK guys couldn't decide if this was a large shrimp or a small lobster. It has been split lengthwise, roasted, and presented head-down. Inoue-san points out that the antennae have a nice crispy, toasty flavor. He's right. It's a bit difficult to scoop out of the shell, but it's very juicy and tasty, worth the effort. The white and pink garnish is a sprig of a type of ginger. (6/29)
