Here's the candy instructor demonstrating one of the techniques. The candy has been pressed through a wire screen (inside the bamboo hoop at the top left) until it looks almost like shredded cheese. He then uses chopsticks to pick up small bunches and press them to the small ball he has in his other hand. (5/31)
